Daniel Humm, the chef behind Eleven Madison Park, will open his namesake restaurant in New York's West Village on October 10, 2026. Humm will offer an à la carte menu and a more relaxed setting, allowing diners to choose individual dishes.
Executive chef Dmitri Magi leads a kitchen built around a wood-fired oven and charcoal grill. Highlights include Spanish branzino and a roast chicken for two named after Humm's mother. The chicken combines brioche and parmesan beneath the skin with lemon and thyme seasoning.
The kitchen tested its pomodoro sauce ten times before settling on the recipe for housemade rigatoni. Vegetable dishes will respond to supplies from Magic Farms and farmers markets. A milk soft-serve dessert pairs buckwheat honey with fresh honeycomb.
The main dining room seats 90, with a separate bar and a 20-seat lounge offering other ways to visit. A drinks trolley will bring martini preparation to diners.
Pierre Yovanovitch designed the space, which features work by Francesco Clemente and Rashid Johnson. Reservations become available three weeks ahead, while some capacity, particularly at the bar, will accommodate walk-ins.
